Love For Your Liver

Pretty regularly I’ll be posting recipes that can be used on the Liver Reduction Diet.  These recipes will be fine for almost all post-surgical patients, too! Sometimes it seems especially hard to come up with variety and taste while traveling the important journey before surgery.  So, fix these, eat them and shower your livers with love (so to speak). 

Please feel free to let me know what you think, how you would change the recipe, or other LRD recipes and foods you come up with!  By the way, this recipe below, I make all the time, and EVERYONE loves it!  Make it for your family! 

Stuffed Italian Bell Peppers

1 small onion, grated
1 egg
¼ cup chopped fresh Italian parsley leaves
3 tablespoons ketchup
2 cloves garlic, minced
1 teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup grated Parmesan cheese
¼ cup quick “one minute” oats
1 pound lean ground turkey
4 bell peppers, halved and seeded (any color bell pepper is good!)
½ cup marinara sauce or tomato sauce
  1. Preheat the oven to 375 degrees F. Spray a 9x13 baking dish with nonstick cooking spray and set aside.
  2. Whisk the onion, egg, parsley, ketchup, garlic, salt, and pepper in a large bowl to blend. Stir in the cheese and quick oats. Gently mix in the turkey until well combined.
  3. Fill the pepper halves with the turkey mixture, dividing equally and mounding slightly. Each bell pepper will contain a little more than 1/3 cup of the meatball mixture. Arrange the stuffed peppers in the baking dish. Spoon 1 Tablespoon of the marinara sauce over each bell pepper.
  4. Bake uncovered until the peppers are tender and beginning to brown, about 40-45 minutes. Transfer the Meatball Stuffed Bell Peppers to a platter and serve.

This recipe sounds great, however, this is the problem I have w/ many recipes I come across. We, as postop patients, have to make sure we are getting between 75-100 grams of protein each day. I cannot tell how many people these serve or what the nutrition content is. I know for myself there is no way I could eat more than a half pepper if that. Is there anyway to get the nutrition count on recipes? Thank you

Michelle, I completely understand! That is why I am working on a Bariatric cookbook as we speak! Remember, the protein grams you need each day is 60 - 80 grams. 90 makes you a superstar! But, no need to go way over that unless you are lifting weights like a crazy woman. Below are the exact nutritionals for 1 serving of this recipe. Enjoy!
